1. Heat spikes at veraison and harvest
A single 105F day between veraison and harvest can shut down photosynthesis and permanently damage skins. Two of them in a row can force an early pick at unripe flavors. The 10-year projection for most warm North American AVAs points at more of these days, not fewer.
2. Compressed veraison window
Sugar accumulation is a temperature-driven process; flavor and tannin ripeness lag behind. When veraison compresses, sugars sprint ahead of phenolics, and you're stuck picking early at 26+ Brix with green tannins or waiting and losing acid.
