For deciduous tree fruits and nuts, winter dormancy is not optional. What used to be a background constant is now a moving variable.

What chill actually does

Deciduous trees need a species- and cultivar-specific accumulation of cool temperatures during dormancy to break dormancy uniformly in spring. Insufficient chill causes staggered budbreak, delayed bloom, poor fruit set, and — over multiple years — reduced tree vigor.

Chill hours vs. chill portions

Chill hours (32-45F) is the historical measurement. Chill portions (from the Dynamic Model) is what most current research uses: it weights moderate temperatures more heavily, and it correctly credits and penalizes intermittent warm periods. Chill portions is the number you want on a modern report.

Where the risk is concentrated

  • California Central Valley. Almonds, pistachios, cherries — largest absolute acreage at chill risk.
  • Southeast (Georgia, South Carolina). Peach cultivar programs already largely built around low-chill options; still exposed on the highest-chill cultivars.
  • Pacific Northwest. Currently well-chilled; on the same trajectory as California, roughly a decade behind.

  2. Dormancy-breaking sprays (hydrogen cyanamide, oil) — regulated in many states.
  3. Site selection for new plantings — higher elevation, cooler aspects.

The traditional definition is hours between 32F and 45F during dormancy (roughly November through February). The more accurate modern measure is chill portions from the Dynamic Model, which weights temperatures nonlinearly — brief warm spells during accumulation can partially cancel earlier chill.
Which crops need the most chill?
High-chill apples like Fuji and Granny Smith (~800+ hours), sweet cherries (~1,000), most almonds (~400-500), pistachios (~700-1,000), and Chardonnay grapes (low). Peach cultivars range widely; low-chill peach programs are decades old in Georgia and Florida.
Can I just plant a low-chill cultivar?
